Hello… It’s me…

Guys, I took a break. I didn’t even know I needed it. But I took one. A long one. But I’m back! I didn’t only listen to Adele, well mostly, but I did do some fun & neat things. The shop launch was pretty exciting and I was thinking about that 90% of the time and I kind of lost the majority of my food inspiration. It’s so sad when that happens. Gladly I have a nice man to make me bowls topped with his famous chipotle sauce. I also read a butt ton of books. Like maybe 4. Which is insane for me. But I think I’m back! For a while anyway. I’m going to keep reading though. It’s better than Netflix.

Did you eat a lot over the holidays? Did you stuff your face? Did you eat gingerbread cookies everyday for a week? Did you eat too much deer sausage that the mere thought of it makes you cringe? Oh man. I so did. We ate good, we ate healthy, like we do. But I feel like I need a fresh start. You know? Like a big bowl of salad? I actually did eat an entire cucumber on Boxing Day. My body wants summer food. I don’t actually have a salad recipe for you today. Or a recipe for an entire cucumber for that matter. Maybe next time.

Today I have a recipe for some really good granola. It’s the end of December, and our go-to afternoon snack has been clementine oranges or applesauce and gingerbread. And I’m over it. It was so lovely while it lasted, but I need something a bit more filling, equally as delicious, and maybe just a teeny bit healthier than cookies. (The gingerbread was “healthified” and super good, but still, they’re cookies!).

Yes, the granola is a bit pumpkin spicey. I boycotted the trend this fall. Mostly because it’s so ridiculous. Can’t we just enjoy something, a little bit? Why does everything need to be so overdone? I laughed when I heard about some fake pumpkin spice products that people thought were real. Pumpkin spice tampons anyone? People would buy those! It’s insanity.

After a long pumpkinspiceless fall, I’m getting my dose of it now. It’s extremely delicious. What can I say? The granola is packed with good for you fats, protein from seeds (k maybe not packed with protein, but it’s in there), and some pumpkin for your health. It’s gluten free. And it’s refined sugar free, as per usual. And it’s way better for you than those store bought granolas. Guys, come on. Why buy it? It literally takes ten minutes to make. I promise. Well plus cooking time. 10 minutes of work!

HALLO FROM THE OUTSIDE…

Pumpkin *cough* spice Granola

Ingredients:
– 4 cups rolled oats
– 1 cup pepitas
– 1 cup unsweetened coconut flakes
– a pinch or two of sea salt
– 3/4 cup pureed pumpkin
– 1 cup maple syrup
– 1/4 cup coconut oil
– 2 teaspoons pumpkin pie spice

Directions:
1. Preheat oven to 350.
2. Line a baking sheet with parchment.
3. Pulse 1 cup of the oats in a food processor (or coffee grinder)
4. Mix everything in a bowl. (I have mentioned this before, but really try not to eat too much at this point. It’s so hard to stop.)
5. Spread it out on the baking sheet.
6. Bake for 20 minutes.
7. Take it out. Give it a stir.
8. Bake it for another 10-15 minutes.
